Today we’d like to introduce you to Armando Serrano.
Hi Armando, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
I’ve always had that spark for being an entrepreneur. My dad was one too, and he used to tell me, “You need to work hard and smart so you don’t have a boss — or at least not an immediate one.” That stuck with me. I think I was blessed with that same drive — always wanting more, always feeling like I was meant to build something of my own.
I still remember when the City of St. George organized this huge toboggan slide right down Main Street, from 200 North all the way to St. George Boulevard. It was such a fun event — the street was full of people, and there were food trucks lined up: a Hawaiian one, a corn dog truck, even a Cuban one. I got curious and asked one of the owners if I could take a look inside their truck. I was amazed — they had everything in there, even a little bathroom!
Not long after that, in 2015, I got the chance to buy my own food trailer. Around that time, the city was doing “First Friday” events downtown — they’d close Main Street and fill it with local vendors and music. Back then, no one was offering Mexican food, and I thought, that’s what’s missing — a taco truck!
So in the fall of 2016, I opened El Señor T Taco Truck. A few months later, it became St. George Taco Truck, and here we are — almost ten years later — still rolling strong. We’ve catered all kinds of events, from Kanab, Utah to Caliente, Nevada, and everywhere in between.
We even opened a restaurant for a short time in Little Valley. It went well at first, but eventually, we decided to close it and focus back on the truck. The truth is, the taco truck never stopped — it’s been our heart since day one. We’ve been part of so many community events and special moments, and I’m really grateful for how much the St. George area has supported us over the years.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
It hasn’t been easy, though. You have to keep adapting and improving to offer the best service — especially now with so much competition. Someone once told me, “If you’re going to do something, you have to be the best.” I took that to heart. It became a personal challenge — always trying to be the best at what I do. Even now, I want my food to taste just like it does in Mexico.
For about six or seven years, I was the only taco truck in town. Now there are around twenty-two! Back then, there were maybe five or six food trucks total — now there are more than eighty in St. George.
COVID in 2020 wasn’t an easy time for anyone. But I still remember — when restaurants had to close, food trucks kept going. For us, it was non-stop!
Finding good employees has always been one of the biggest challenges for food trucks. Another challenge, especially in the early days, was finding supplies. Back then, you couldn’t get everything you needed locally — sometimes you had to drive all the way to Las Vegas just to stock up for the truck.
Working in a food truck is incredibly hard work — long hours, hot summers, and a lot of effort — but it’s also very rewarding. Every taco we serve is a little piece of who we are, and seeing people enjoy that makes it all worth it.

My son and my two daughters are my greatest happiness! 😊
I love going places, meeting people, and seeing the smiles of those who hire us. There’s nothing better than watching everyone enjoy our food and knowing they’re happy.
At the end of the day, I always feel grateful — because no matter how big or small the event, I always deliver.
It’s a daily challenge to be the best, but that’s what drives me — giving my best service, event after event, and fulfilling my passion for making people happy through great food.
