Hi Estefania, so excited to have you on the platform. So before we get into questions about your work-life, maybe you can bring our readers up to speed on your story and how you got to where you are today?
The dream started with Chef Leo, who was cooking at restaurants at the age of 16. He had worked in all types of areas in the food industry, from food plants, distributing, serving, to cooking. After 30 years of cooking in numerous restaurants around the country, he had mastered American, Mexican, and Japanese cuisine. After talking to his good friend Daniel, they decided to work together and open a restaurant. Daniel and Chef Leo’s families remodeled the new business and made the building’s kitchen functional once more.
Wanting to provide more variety to Brigham City, Chef Leo decided to open a Japanese restaurant. Our family-owned restaurant opened in November 2018. The chef wanted to sell his own high-quality food at a fair price. To do so, he decided on Hibachi styled dishes cooked by 1 person in the kitchen, instead of multiple chefs cooking at different tables, lowering the labor cost and food pricing for customers.
He wanted a unique and healthy dining option for the town. Takumi’s menu requires fresh ingredients with no chemicals and no preservatives. Our Yum-Yum Sauce, Ginger Sauce, and Teriyaki sauce is made in house using the chef’s secret recipes. Takumi has always supported local businesses when it came to purchasing it’s ingredients. As years passed by, Daniel decided to sell his half of the business to the chef’s family. The family has happily been operating at Takumi for the past 7 years.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
We have struggled with getting people to come to the north side of Brigham where the restaurant is. Most restaurants and businesses are in the center or the south side of Brigham City. Takumi shares the same building with Vinci’s bowling alley but are separate businesses. We are only 3 minutes away from the Brigham City Temple.
Appreciate you sharing that. What should we know about Takumi Japanese Grill?
We do our best to live up to the restaurant’s name, “Takumi”, meaning “Artisan” in English. We put a lot of effort into preparing our food. The preparation starts before anything touches the grill. We hand cut our filet mignon and steak so it is as lean as possible, and we also cut the chicken, pork, and vegetables. The salmon is high quality The fried rice is made daily, and our pho is made from scratch taking hours to finish. Our Sweet Carrots, Teriyaki Sauce, Yum-Yum Sauce, and Ginger Sauce are also made in house with no preservatives. All of these recipes remain a secret.
Is there a quality that you most attribute to your success?
Cleanliness, good food, and good service. Our meals are not pre-made, they are fresh and cooked to order, This also means that we are not a fast-food restaurant, as it takes us a bit more time to prepare each entrée. As always, we make sure the service at the front is efficient and friendly.
