Meet Milo Carrier of Arlo Restaurant

Today we’d like to introduce you to Milo Carrier. Them and their team share their story with us below:

Milo Carrier, executive chef/owner, age 34, is a native of Salt Lake City who began cooking in restaurant kitchens at age 16. Carrier went on to attend the Culinary Institute of America, the world’s foremost food and wine authority. Thereafter, he spent seven years in San Francisco at the Michelin Star and James Beard Award-winning restaurant, Boulevard, as Sous Chef.

Highly knowledgeable in the realm of remarkable food, he has worked alongside many inspiring fellow chefs around the world, from New Zealand to France. Upon returning to Salt Lake City in 2017, Carrier began operating a biweekly series of pop-up dining events where he workshopped dishes and ingredients for a revolving group of growing fans.

As the clientele list from these events grew, so did the demand for his outstanding culinary style, leading to the realization of Arlo. A restaurant that is both the realization of his childhood dreams and the oftentimes all-consuming focus of his evolving creativity.

Alright, so let’s dig a little deeper into the story – has it been an easy path overall, and if not, what were the challenges you’ve had to overcome?
Arlo opened on July 8 of 2020, almost certainly the worst time for a restaurant to attempt a launch. Our open date also made us ineligible for basically all of all relief programs and pandemic funds as they were only for those businesses operating prior to March of 2020.

We were saved by our large patio and the wonderful locals who continued to support us. We clawed our way through those dark days and are so happy to say that it feels like we are on the other side of it.

Alright, so let’s switch gears a bit and talk business. What should we know?
Arlo restaurant is an elevated casual, chef-driven restaurant located in the vibrant heart of the marmalade neighborhood. It is a favorite among locals as well as a special destination for the greater Salt Lake area and visitors alike. The restaurant’s menu draws inspiration from a global palette, with contemporary food and drink and an approach to hospitality that makes everyone feel welcome.

Sustainability and responsible commerce are at the heart of Arlo’s operations. We are proud to partner with local farms and maintain our own whole-animal butchery program. Our offerings change regularly as we respond to creative whims and seasonal shifts.

We love surprises, fun facts, and unexpected stories. Is there something you can share that might surprise us?
Arlo occupies a unique spot in the SLC restaurant landscape. It is one of the few spots with a constantly evolving and changing menu as well as a whole animal butchery program. The restaurant is a huge believer in minimizing waste, so we utilize the entirety of an animal and work with local farms to put all of their crops to use.

The chef is a highly creative individual who honestly, probably could never offer the same menu for months – let alone years at a time without feeling stifled and bored. This is quite different from most restaurants in Salt Lake.
