Community Highlights: Meet Jimmy Watson of Bun Boiz

Today we’d like to introduce you to Jimmy Watson.

Hi Jimmy, thanks for joining us today. We’d love for you to start by introducing yourself.
We started as an idea in my college apartment kitchen. I started to experiment with all sorts of recipes for steamed bun dough. After that, I perfected the fillings. I would have my friends and neighbors over every Sunday to try out my experiments. After about 3 months of this, I decided it was time for a pop up we did a 3-day long pop-up from 6-12 am Thursday, Friday, and Saturday in Feb. of 2021.

The pop-up was a hit and we sold out every night. It was a disaster from an operations standpoint but by the end, we learned so much that we still use it to this day. For the next 6 months, we opened on weekends wherever we could find space we did pop-ups. We also did catering for weddings, family reunions, and other events. Eventually, after months of “illegal” apartment cooking, we found the location where we are today. We fixed it up for two months and then opened in October of 2021. We’ve been here and growing ever since!

We all face challenges, but looking back would you describe it as a relatively smooth road?
It has been rough like a rollercoaster. Filled with ups and down along the way. I have never been so stressed as I was during the first 2 months of pop-ups and the first 3 months of opening our brick-and-mortar location.

On top of the stress, we ran into problems with the health department that were soon overcome by us finding our location. There’s been so much going right and wrong and everything in between from little things like not being able to staff our store to all our fridges losing power overnight the day before we opened and having to remake everything the same day as opening day, to selling out and just 3 hours of opening.

We specialize in American fusion steamed buns. We’re young but growing strong.

We’re known for fast high quality food at a great price. I think I’m most proud of our culture within the company we’re just a big family. I’m also super proud of the ways we’re able to make customers smile. I want the readers to know that we offer an amazing experience in fast casual dining and something totally unique to us!!
