Today we’d like to introduce you to Jamie Miller.
Hi Jamie, thanks for joining us today. We’d love for you to start by introducing yourself.
I am excited to share my journey with you. Although I wasn’t always involved in the food industry, my heart, and soul were deeply invested in it. From a young age, I watched my mother and grandmother cook in the kitchen, and the delicious aromas that filled the air always made my mouth water. It was like magic to me.
Despite working full-time at the hospital and attending Weber State University part-time to pursue my nursing degree, I made it a priority to sell elotes at city events and local farmers’ markets.
Armed with a simple pop-up canopy and a camp chef stove to boil corn. My lines grew longer and longer with each passing year. I was hooked! The more I participated in these events, the stronger my desire became to quit my job and pursue my passion.
However, as someone who knew nothing about running a business, it was a daunting prospect. The medical field has become such a significant part of my identity, that I wasn’t sure if I was ready to leave it behind. I took a leap of faith and believed in myself. A learning curve on the business part, but I would say just believing in myself and getting out of my way. I’m proud to introduce myself as Jamie Miller, the owner, and operator of Chica’s Mexican food truck.
Can you tell our readers more about what you do and what you think sets you apart from others?
Chica’s Mexican food truck is not your typical taqueria, and I am proud to be the owner and operator of this unique business.
Our cooking style embraces the traditional way of preparing Mexican food while incorporating new, bold flavors. We are especially known for our flavorful meats, which are always cooked to perfection.
In a traditional taqueria, you will typically find all-male staff working in the kitchen, with females handing orders. At Chica’s, however, we are proud to be a female-owned and operated business. What sets us apart is the exceptional customer service we provide and the love and passion that goes into every dish we serve.

As an entrepreneur, the support of loved ones can make all the difference in achieving success. I count myself incredibly blessed to have had unwavering support from my family in helping me navigate the ups and downs.
