Today we’d like to introduce you to Brittany Vasquez Seupule

Hi Brittany, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
We are a family owned business and we all help out and contribute. We started with family owned food trucks. Brittany and Wally Seupule owned a Hawaiian food truck called Wally’s Island Grill, Jacob and Joshua Vasquez still own a food truck called Doggie Style Hot Dogs and Sandwiches.

We decided to bring our passion for food and service together and open our first brick and mortar.

The family includes Mom and Dad, Angela and Howard Vasquez, Jacob and Megan Vasquez, Joshua Vasquez, Brittany and Wally Seupule

And of course the family Dog, Hank

Alright, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
Owning a business always has it challenges.

Many of our family members work other full time jobs, Brittany and Angela are school teachers and Howard is an engineer for Union Pacific. We all struggle to make time for ourselves and find a good work-life balance.

It helps that we love spending time with each other and always have a good time when we are at the restaurant.

Thanks – so what else should our readers know about Hank’s Bistro and Brew?
We are a brand new restaurant in Eden, Utah. We come from many generations of foodies and we just love to cook and eat. It makes us so happy to be able to share that passion with the community.

We are always trying new recipes and creating new unique dishes and we love to run specials. We offer very high quality and fresh ingredients that set us apart.

We are proud of our customer service and always strive to make everyone feel like they are part of the family.

We have a wide variety of food, from our most popular dish, our smash burger, to pizza, pastas, and protein packed bowls.

What was your favorite childhood memory?
One of our favorite family memories are our houseboat trips to Lake Powell. We loved spending a week together exploring the lake, wakeboarding, and water skiing.
