

Today we’d like to introduce you to Peter Cole.
Hi Peter, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
While attending the Culinary Institute of America, I became friendly with a student from Utah. We began skiing in Vermont and we explored skiing in Utah together. After graduating, I started my career in NYC. I worked as a chef for twenty years and loved the fast pace of the NY restaurant scene, After raising my family, I could retire but I was too young. I wanted a lifestyle change and more free time.
Having traveled throughout Utah, I investigated an opportunity to buy my own restaurant. I found the perfect location in Torrey, Utah for a seasonal business, which allows me to travel and ski. The existing locale has been updated and I have found my signature Bar-Be-Que brand.
I have formulated my own smoky rub to use in my smokehouse. I enjoy using the finest ingredients and fresh Wayne County vegetables. I also have a passion for making people happy! I’m excited to continue making the best food possible and delighting my clients.
I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey has been a fairly smooth road?
I bought the business in 2017 and had to do extensive remodeling just to open. After three years of operating a successful business, the pandemic happened. During this time I took on a major updating project for my facility. Unfortunately, a board I was sawing hit a knot and my left fingers went into the saw.
The upside of that tragedy was having time to rehab my hand and mind while we were closed for Covid.
Since that time, I am fully functional, despite missing a few fingers on my left hand. (I like to laugh at life.)
We’ve been impressed with Torrey Grill and BBQ, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
I’m an amazing “Hidden Gem”! My location is inside with Thousand Lakes Rv Park. I love this because my customers are often staying in the park for several days, allowing me to get to know people from all over the world. I decorate with flags which represent many of the countries of my new friends! I also have a robust clientele of locals and tourists that are staying at hotels, camping, or biking through the area.
I’m most proud of my Google, Yelp, and TripAdvisor reviews, This tells me that I have the winning recipe for success.
Is there a quality that you most attribute to your success?
I have developed a special technique for smoking meat. My house-made dry rub is the first step, old growth fruit hardwoods for smoking and perfect timing make my Bar-Be-Que world-class.
