Today we’d like to introduce you to Herminia ( Hermie ) Dela Cruz He.

Herminia ( Hermie ) Dela Cruz He

Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
Loki Coffee is made up of two people (Hermie & Jake) who obnoxiously enjoyed their jobs at their previous coffee shops in Boston with hopes of opening their own. With 10 years under our belt, loads of passion, drive, and dreaming big, we bring to you Loki Coffee, your friendly Salt Lake neighborhood coffee shop!

We all face challenges, but looking back would you describe it as a relatively smooth road?
With everything in life, there are always challenges along the way. Lots of emotions, trust, stress, doubt, and excitement played a big role in this project but we knew at the end of the day, it would pay off because it is what we wanted, dreamed of, and worked towards.

The construction aspect was something new to us, and another skill we had to get familiar with, but aside from that, staying true to our vision and making sure it was shown was very important to us.

We’ve been impressed with Loki Coffee , but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
Loki Coffee is our passion project. We are a specialty coffee shop that highlights local vendors and is a safe space for all walks of life! We aim to create a welcoming community, connection, and growth with our team.

We designed the space hoping guests would use it as a place to meet up, connect, or just get some work done outside. We made sure to have plenty of outlets at all of the seating areas, and our indoor and patio space is great for events and meet-ups. Renovating over 2,000 sq ft. of cafe space, the wooden booths and much of the woodwork within the cafe were handcrafted by us and our family.

Guests can find your signature espresso and milk drinks, such as a cortado, cappuccino, or latte at Loki Coffee, as well as your classic matcha and chai latte for tea lovers. All of our latte syrups are made by hand in-house – our hazelnut latte has been popular since we’ve opened, and our Mocha (for non-caffeine drinkers) latte, which is made with real chocolate.

For guests seeking some hot brewed coffee, we have a medium blend on our daily drip, or ask to view our rotating single-origin drip coffee menu that changes weekly! We love connecting with and featuring our friends within the coffee community and sharing them with our guests.

We also have a rotating pour-over coffee selection – where we brew by single cup at a time – which, when you order for dine-in, you can get the whole experience.

Guest can pair their drinks with menu options ranging from avocado and salmon toast to banana bread, cookies, to freshly baked goods from local Tomodachi Bake Shoppe featuring your Traditional Croissant, Pain au Chocolat, and the Ham & Gruyere Croissant.

For those seeking to try out some new flavors, check out our seasonal drinks menu! This summer, we have our Kafe Mansi, a refreshing cold brew & calamansi lemonade drink, our Sea Salt Peak coffee series, featuring sea salt foam over either cold brew or a matcha latte, and our Affogato – a double shot of espresso with a scoop of ice cream.

For those who are interested in learning more about coffee or attending a coffee cupping or workshop, we plan monthly events with our team and partners within the coffee community.

Guests can check out our events calendar online at www.lokicoffeeco.com or in-cafe to view our monthly coffee workshops, cuppings, food pop-ups, craft-making classes, and more!

We also host many amazing local vendors and their goods which you can purchase grab & go in-store! Browse our curated selection of Merch., and local goods ranging from freshly baked bread, chocolates, flowers, plants, sourdough pizza starter kits, and more.

We’re located on the 900 S bike lane and a minute’s walk from Liberty Wells Park. There are a host of amazing local stores and shops along the 900 S that are perfect to visit after grabbing a drink and food at Loki Coffee!

Can you share something surprising about yourself?
“I knew I wanted to open my own coffee shop since high school. This was always my plan A & never really had a plan B.” – Hermie
