Hidden Gems: Meet Morgan Chapman of Cashew Confections

Today we’d like to introduce you to Morgan Chapman

Hi Morgan, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
Cooking and baking have been ingrained in me through my family, and I always knew that I wanted to make a career doing something that brings me as much joy as cooking. Opening a restaurant or a bakery seemed daunting until Summer 2024, when I decided to spend a few hours a week cooking some of my favorite childhood treats, vegan-ising the recipes and selling them via social media. I made my grandma’s lemon poppy seed and banana breads, and my mom’s lollipop and Gigi bar recipes, the latter being named for her. Thanks to some amazing friends, I’ve been given wonderful opportunities to stock my treats at markets and other local vegan businesses.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
Starting a business of any kind is difficult, and I’m still in my first year of Cashew Confections. I feel like I’m learning more every day simply because this is all so new. Time management has been my biggest struggle, because I work multiple jobs outside of Cashew Confections. I’m also a gymnastics and circus coach and performer, so juggling baking in between teaching classes and my own training has been difficult. Baking isn’t something you can necessarily get done in a half hour between classes.

Great, so let’s talk business. Can you tell our readers more about what you do and what you think sets you apart from others?
Cashew Confections is a fully vegan bakery specializing in decadent cookies and other baked goods that bring nostalgic comfort to those who can’t just buy these treats anywhere. We’re especially well known for the oatmeal creme pie, and it’s sister, the oatmeal molasses ice cream sandwich. This summer we’re excited to be releasing more ice cream sandwich options, featuring our homemade ice creams. We’re proud that we’ve been able to use Cashew Confections to support local arts by vending at shows and events, as well as donate to local causes that are close to our hearts.

What matters most to you? Why?
It is important to me to have authentic, simple ingredients, and to provide a sweet treat with that homemade quality that a lot of vegans, and those with allergies, miss. Dessert options for vegans, and those with milk, soy, and other allergies can be scarce; and sometimes you just need a little treat. To be able to provide that small comfort is a real joy.
