Inspiring Conversations with Chelsey Butterfield of Golden Hour Farm

Today we’d like to introduce you to Chelsey Butterfield. 

Hi Chelsey, we’d love for you to start by introducing yourself
My husband and I were married back in 2015 and immediately moved to Europe to follow his dream of playing professional basketball. We lived in many different countries including Lithuania, France, Germany, Italy, and Spain. During our time there, I was an online graduate student studying social work and a new mom to two amazing kids. However, I found myself reading books about farming, taking care of cows and other farm animals, and living off the land instead of my school books, and dreaming of my kids running around outside in the sunshine. I truly had an itch that I could not ignore! We both admire the self-sustaining lifestyle as well and are excited to teach our kids this way of life. My husband grew up in rural Northern California and had experience in farming communities and I had a dream. So, between his skills and my passion, Golden Hour Farm was born. We returned home from Europe in the summer of 2021 and immediately began building our farm on 60 acres in beautiful Cache Valley, Utah. Our main focus is our Highland Cattle. We absolutely love the breed and the tasty, lean meat they provide. Golden Hour Farm is also home to chickens, pigs, and other little critters we like to share our land with. We are grateful to be a part of the farming community. 

Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
I would say our road to starting Golden Hour Farm has not been completely smooth however, my husband’s professional basketball career did provide us with the ability to start our farm and acquire our herds fairly quickly. The hardest part for us has been “learning as we go.” We are a first-generation farming family and have had to rely a lot on kind neighbors and mentors who have helped us learn all about farming and ranching. I could read as many books about it as possible and it would still not compare to the knowledge and wisdom experienced farmers/ranchers have. There is so much more to a farm than just taking care of animals and having a green thumb. Finding local butchers (ones who are available- thanks to the pandemic!), caring for an entire herd of cattle, building fences and infrastructure… we have learned so much over the past few months! It’s hard and honest work and extremely satisfying. 

Appreciate you sharing that. What should we know about Golden Hour Farm?
Golden Hour Farm provides natural, sustainable, quality beef. Our Highland cattle are grass-fed and pasture-raised. They spend their days roaming our pastures in the sunshine and surrounded by the beautiful Wasatch Mountain range. Scottish Highlanders are famous for being lean and flavorful while providing a healthy, low fat, and low cholesterol meat. We are proud to provide this standard of meat to our customers. We currently sell beef from our Highlanders in 1/4, 1/2, or whole animals. 1/4 cow is roughly 100 lbs. of meat and so forth. Boxes contain all sorts of cuts from Short Ribs to Tenderloin Steaks and more! I am most proud of the fact that we are providing a natural and comfortable way of life for our cows which in return provides healthy and flavorful meat for my family and our customers. 

Let’s talk about our city – what do you love? What do you not love?
Ah, beautiful Cache Valley. There is so much about this place that we love! To start, it’s where my husband and I began our relationship, my husband played basketball for Utah State University here- Go Aggies! we got married here, the people are incredible and the pace of life is slow. We always joke that when we drive into the valley, we can feel our stress lessen and our lives slow down. It’s a magical place full of agriculture, hills and valleys, snowy winters and mild summers, and all surrounded by beautiful mountains. It’s my own personal heaven on Earth! There is truly not much that I don’t like about Cache Valley but the consistent negative temps in the winter might just make the list! It’s a good thing our Highland cows are bred for such weather!
