Today we’d like to introduce you to Rebecca Christensen.
Hi Rebecca, so excited to have you with us today. What can you tell us about your story?
I’ve always felt most comfortable in the kitchen. As a little girl I dreamt of becoming a wedding cake decorater. I loved the idea of creating beautiful delicious cakes and desserts. Through the years, I’ve improved my skills through trial and error and countless days in the kitchen with my Mother and Grandmothers. I still use their recipes in my bakes. They’re a huge part of who I’ve become. When I was 11, I needed to earn money to go on choir tour. I decided to make pies for mother’s Day. I took orders for 90 pies. When I got married, I was given a cookbook. It was one of those neighborhood cookbooks where everyone submits their best recipes. Over the last 23 years, I’ve worked hard to fine tune some of those recipes.
I was a stay at home mother. We made cookies and then progressed into fancy desserts. I started making caramel apples with my Grandmother’s caramel recipe. I would give them to friends, neighbors and gave them away as graduation gifts for kids in the neighborhood. Everyone told me how much they loved my Carmel apples and said they were the best they have ever had and that I should start a business. Many people told me this over the years.
Fast forward to 4 years ago. My baby was in first grade. I didn’t know what to do with myself while they were in school. A dear friend of mine asked me what I would love to do. I told her I would love to open a bakery and sell cakes and Carmel apples. She told me that I should absolutely do it. I am so grateful for her belief that I could make my dream come true. That was push I needed that my dream really could come true.
We had a building next to our home. With my husbands amazing skills we converted the building into a commercial kitchen. I love that my house is my house and my kitchen is my kitchen and that I don’t have to work far from home. I started going around to businesses in the area to see if they needed any baked goods to sell in their stores. My first store was Riley’s taste of sunshine. Shortly after that Aroma Cafe in Santaquinn was looking for a local bakery to make quality breads for them. I was thrilled to be chosen and continue to make brioche breads and sourdough breads for them. Now I have 5 businesses that I make baked items for.
I started taking custom orders and focusing on holiday bake sales. In 2024, I had a goal to go out once a week and sell my Sourdough breads, Carmel apples and cream puffs. I started this in January (typical time to make goals). Each week i would set up a table at the parking lot just down the road from my house. It was really cold those first few months. But, I made a goal and I went every week rain or shine. I really enjoyed providing high quality baked goods to my community. I loved that you could find really good sourdough bread or a Charlotte Rouse cake in Payson. Those days were really good. I sold a lot of Carmel apples, cream puffs and sourdough breads. My husband said that if I was going to do this every week he was going to build me a food truck. He and my Son welded it together and did an amazing job. We opened my food truck March of 2024.
I still continue my weekly bake sales. Now it’s twice a week. Wednesdays at the Salem fast gas parking lot. Thursdays at the Payson Napa parking lot. I also go to a few festivals in the summer. My favorite summer festivals are Payson Scottish Festival, Salem Days, Onion Days. I do close up my trailer during the holidays. I get busy with custom orders for the holiday.
This year, I really had a desire to enter some of my baked goods into the State Fair. I entered a loaf of Plain Sourdough Bread, A Carmel Apple, Raspberry Rolls and Cream puffs. I was really hoping that I would get at least one nice ribbon. I was thrilled when I found I had won 3 best of show ribbons and the top ribbon (the board of directors choice)that you can win for my Sourdough Bread. It was really great to win those awards and I proudly display them in my trailer.
I really enjoy providing gourmet desserts and breads to my community. I love that you can order really good custom cakes, desserts and breads in Payson Utah.
I also love that I can teach my children that with hard work and dedication dreams really do come true.
We all face challenges, but looking back would you describe it as a relatively smooth road?
Making dreams come true aways come with their struggles. It’s been hard to find the balance between putting in the necessary time to move your business forward and balance it with family time.
Balancing home and business has been my top goal for this year. I have learned a lot and we’ve done some great things this year
Alright, so let’s switch gears a bit and talk business. What should we know?
I specialize in making Sourdough Breads, Carmel Apples, Pastries, Cakes, catering and so much more. I take all kinds of custom orders.
My favorite pastry is my Strawberries and Cream Croissant. I fill my croissants with my pastry cream and strawberries and top the croissant with ganosh
I also love my pastry cream. I love to fill just about anything with my pastry cream. Cream puffs, filling in my cakes and cupcakes, etc.
I really enjoy making things that you cannot find in stores, example: Pavlova, Charlotte Rouse, Napoleon cakes, Custom Birthday cakes etc…
One of my concerns is that as Americans we are losing quality flavors in our food. Many families do not have the time anymore to make homemade breads, jams or desserts Many stores are taking away quality ingredients to provide cheap and easy desserts. I’ve molded my business to fulfill quality gourmet breads, desserts and food and get them back into homes of our community.
