Meet Caralee Edmunds

Today we’d like to introduce you to Caralee Edmunds. They and their team shared their story with us below:

Caralee Edmunds

WE ice was started in 2014 in Tri-Cities, Washington State, Two little families the Worcotts and Evans wanted to create shave ice recipes with fun unique dessert combinations and industry no-nos.

Each crystal of ice should be touched by the flavors and a smooth soft treat will result. Shave ice made with unique toppings…melted vanilla ice cream, caramel, chocolate, coconut sauce, whip, crystal sugar sprinkles, and topped with a cherry. Combining their last names resulted in the WE of WE ice!

Their product was a hit and in 2016 they wanted to expand and invited some of their family in Utah to join the WE ice team. Jarred and Caralee Edmunds of Eagle Mountain opened a WE ice in the summer of 2017 and have been sharing this unique yummy product ever since. This little yellow trailer has become a part of the Eagle Mountain community.

The Edmunds love serving a little happiness in a cup at city and private events as well as their fixed location. 2023 has brought a new home for We ice. Located at 3726 E. Campus Drive off Highway 73 and Ranches Parkway.

Can you talk to us about the challenges and lessons you’ve learned along the way? Looking back, would you say it’s been easy or smooth in retrospect?
Learning to manage a little family business can be a challenge. Finding balance and respite from work is one of the biggest obstacles. Many members of our immediate family work at making WE ice succeed.

We love what we do but with a mobile business, we are dependent on others to work with us to find a location that meets our needs and is up to city codes and standards. The city has ordinances and rules to follow and we always want to respect and honor the laws in place.

As you know, we’re big fans of you and your work. For our readers who might not be as familiar what can you tell them about what you do?
WE ice is known for having a high-quality product at a reasonable price. We want everyone to be completely satisfied with their treatment and enjoy every last drop. Making memories before the ice melts.

WE ice employs 12 youth from our community and we want to have young people who learn to serve with kindness, respect, and honor in their job. Our goal is to build a great product and build character in those who work for us.

Who else deserves credit for your story?
We know that the community that frequents WE ice is the backbone of our business.

We want everyone who is our guest to love their product and enjoy their time in our midst. Serving a product that someone wants to come back for over and over is how we find success.
