Today we’d like to introduce you to Rachel Pollock.
Hi Rachel, we’d love for you to start by introducing yourself.
I’ve always loved making cakes for people when they would have birthdays or events. I started selling small items at farmer’s markets in Houston, where I’m from in 2015.
When I moved to Moab, I had a slew of different jobs that just didn’t satisfy me, so I continued making cakes and treats after work for friends.
Snakeoil Coffee here, where I was a regular, saw my baking Instagram and asked if I’d want to start making breakfast items for them, so with that, I decided to start back up my baking, but in a bigger way!
We all face challenges, but looking back would you describe it as a relatively smooth road?
No road is ever smooth. The biggest struggle here in Moab has been finding a commercial kitchen that I can operate out of. I’ve moved my “kitchen” countless times.
Other than that, actually making ends meet with other jobs while also being stoked enough to continue my own business has been a real balancing act.
As you know, we’re big fans of Baked by Rachel Moab. For our readers who might not be as familiar what can you tell them about the brand?
I am mostly known for my scones and banana bread at Snakeoil Coffee in Moab. I’m also known for trying to donate as much as I can to nonprofit organizations in town. If you have an event and want a real show-stopping cake, I’m stoked to make that for your nonprofit organization at a huge discount or even as a full-on donation.
I’m very proud of my logo. I love the uniqueness that also uniquely captures the desert with my lizard. My friend Luke Cook Designs did such a great job making an eye-catching design.
I’m currently taking a hiatus from most cakes, but if I really connect with a client and they want a very unique cake, I’m in! I do still offer catering for your business events or nonprofit events!!!
The crisis has affected us all in different ways. How has it affected you and any important lessons or epiphanies you can share with us?
The biggest thing I learned from the Covid-19 crisis is that if you put your head down and work for it, nothing can stop you from achieving what you want.
